There’s a long/slender gray funnel I’ve got that works great for these 3.5 Honda J series engines. I’ll try to find a link, but you’ll know it when you see it. No need for a two filter setup like you had to improvise. Yikes about what you pulled off. Nice job on the oil/filter.
You may be right about the color, but with that said that'd be the first I've ever heard of the color change. If I were you, I'd change that coolant out asap. And I'd run a couple of changes through to where it looked pink vs orange.

Toyota 5.7L V8 with 94638 on the clock and a 5033 mile OCI. I left the Amsoil filter in place for another run since it's got plenty of life left.
OUT: HPL PPCMO 0W30
IN: HPL PPCMO 5W30
Amsoil is better. Toyota charges more bc they have fanboi’s that will buy it because of their sticker being on the bottle. If you’re chasing quality, get the Amsoil.
