I have Windows 7 on my Compaq laptop. It has a Celeron M 1.7 GHz processor and 2 GB of RAM, and runs fine. It uses Intel's GMA 950 graphics if I recall correctly. It's not lightning-fast like something new would be, but it's faster than XP by a small margin and much faster than Vista.
 
I agree with Towncivilian.

I've put W7 on P4 laptops. It runs, but barely. Besides the processor, the bigger bottlenecks are the system and HDD bus. The real determinant is the video section. A good discrete video card makes a huge difference on a borderline system, as W7 is much more 3d intensive than XP (no matter what MS tells you).
 
If you turn off all the pretty eye candy and any non-essential services (like the sidebar and search indexer) then you'll probably be alright. I'm about to put Windows 7 64bit on an Athlon 64 3000 with 1gb of memory.

I guess the bottom line is to try it, and see if it is fast enough for you. Fast is a subjective, relative concept, and if you've got the time, then it may work fine. If you didn't pay too much for the license, then it should be worth at least a try.

1GB ram is bare minimum, though. Be sure to disable all non-essential services and apps or it will bog. Even running in non-aero, the updated apps themselves will load down that system. I'd limit protection to a single lean AV/AMW such as NOD32, and nothing more.

Yeah 1GB is better to stick with WinXP, for Win 7 2 GB is highly recommended to ensure the speed is acceptable.
