I did an oil change on a '95 Ford F-150 over the weekend. It has the 5.0 V8 engine. I looked in the owner's manual and it stated 5 quarts for the engine capacity so that's what I put in it. Started it up, everything sounded fine, but I made one crucial mistake: I forgot to check the oil level. I called them back and had them check and they told me it was at the full mark but I don't know if perhaps he didn't check it right? I now read on Amsoil that it takes 6 quarts with filter, and I'm wondering if the manual actually said 5 quarts WITHOUT the filter, and I should have put 6 quarts in? Does anyone else know about this and should I call to have them add another quart?

There usually is some room for flexibility. Not all manuals/documents are correct either.
I'd never blindly go by the manual, but would rather go by the dipstick, which, unless the wrong "model" is perfectly accurate for that engine.
If it is full, then it is full.

did the vehicle have 2 drain plugs? many 5.0's do.

Not that I could see... I just saw one on the passenger side of the oil pan. I don't know where the other one would've been. It holds 5 quarts. You are fine.
hopefully the trucks dont have two drain plugs. I know some of the mustangs do, as did the LTD I changed oil in. ended up with it overfilled because I didn't know to look for the second drain plug. had two drain out two qts. and it was during a switch from conventional to amsoil. grrr. you wont hurt anything with a quart low - and if they see full on the dipstick.....

4x4's don't, I think the 4x2's DO. It's been a while though, so that may not be correct.
I just went out to the garage and transferred what came out of the pan into a 5 quart jug and it filled it up, so I'm thinking it had a 5 quart capacity PLUS what was in the filter... but he swears up and down that he checked the dipstick a number of times and it said full every time. Weird! I told him to check it again next time he gets a chance or maybe bring it here so I can check it just to double check. Overkill, that's including the filter? Oh, I just remembered that I did hot drain the filter into the drain pan so I'm guessing 1/4-1/2 quart may have came out, which could skew my results.

It does for all the 302's I've ever worked on and owned. I use 5L though, which is a bit more than 5 quarts, but I know they call for 5 quarts.

It does for all the 302's I've ever worked on and owned. I use 5L though, which is a bit more than 5 quarts, but I know they call for 5 quarts.

I sent a message to Amsoil with their "discrepancy report" telling them about the 5.0 issue. I've noticed small discrepancies before but not to the tune of 1 quart. On the Integra they list 4.1 quarts but the owners manual AND the OEM Helm's service manual specifically says 4.0. Not a big deal, but I know first hand it's not 4.1

I can't imagine only putting in 3.8L in my Lincoln. I doubt it would show on the dipstick!
