Wife just showed me a ham butt

I like ham, especially the bone in a batch of Navy Beans. But we will have corned beef here. Leftovers make really good sandwiches, as does ham.

Isn't that really a more traditional Irish meal than corned beef?

I've actually learned how to make Chinese-style braised pork belly from a Chinese friend. You of course need pork belly, but it's hard to find the kind that still has the skin. I saw pork belly at Costco, and it looked pretty nice but the skin was cut off. I go to Chinatown to get the pork, but it's a little bit difficult explaining what I want to someone who doesn't really speak English. Bigger Asian supermarkets are better about speaking English, but they aren't as cheap.

You don't have any friends that speak Chinese? I lived in Castro until last year, and can think of a handful of friends that I'm sure would be willing to teach you enough verbiage to get your pork belly.

Probably not, at least as far as Irish-AMERICAN meals go. The actual Irish often had cured beef shoulder on major holidays, and corned beef was the closest the early Irish immigrants could find...

+10 on beans with pork shank. I grew up in New Mexico where they used to grow lots of pinto beans. During WWII there was a warehouse near us that was full to the roof with sacks of pinto beans grown in the Estancia Valley. All going to the war effort and off limits to civilians. A neighbor had a job there and quite often my mom was left a small bag of pinto beans. Apparently some of those burlap bags leaked. Nothing wrong with Navy Beans.
