What’s your “signature” dish - the one people always ask you to make?

Do you have that one dish you’re known for among friends or family?
Like, the one people always expect you to bring to a potluck, or the one your kids ask for on their birthdays?

I realized recently that mine is chicken tikka masala , it started as a random recipe I tried during lockdown, but now it’s the #1 request every time we have guests over. Creamy, spicy, and totally comfort food. I serve it with garlic naan and basmati rice, and it always disappears fast.

I make a Scalloped Potatoes (using 3 cheeses) which is always brought up during big meal planning.
Dear Mom and Elder Sis honed the recipe.
Besides being real good, it does involve quite a lot of work; so a fairly substantial contribution.

Worked in a NY pizzeria for 6 years in high school and part of college - I make a mean linguini with clam sauce, chicken marsala or francese, and any pasta alla vodka.
 
Bacon-wrapped, boneless chicken thighs stuffed with slices of onions, jalapeno, and Emmentaler cheese, coated with a rub and slow-smoked at 225F until fully cooked.

I’ve never been to a potluck and don’t have people visit my apartment on a regular basis.
I guess my wife often requests beef ribs that I cook in the slow cooker and then finish in the griller.
 
I call it the "brisket bomb".

- Brisket point
- Baking potatoes
- Sharp cheddar
- Candied jalapenos
- Yellow onions

I season a brisket point well with my own seasoning mix. (see below) It then goes in the crockpot along with 2 yellow onions cut into slices and some apple cider vinegar, butter (whole stick), Worcestershire sauce, a little beef broth, minced garlic, and a splash of soy sauce. Let it cook low and slow for 10-12 hours.

About an hour before the brisket is done, I coat some large russet potatoes in olive oil and season with celtic salt and black pepper. They go in the oven at 450°F for an hour or so.

When the brisket is done, I shred it in the crockpot with the juice and onions. I take a baked potato, split it open, put some garlic and herb butter (Kerrygold) in there, drop a good helping of shredded brisket and onion in/on it, top with shredded cheese and candied jalapenos. Spoon some more of the juice over it and dig in.

- Sea salt
- Black pepper
- Garlic powder
- Onion Powder
- Paprika
- Chili powder
- Lemon zest
- Brown sugar
