What is so "dated" about my interior?

It's pretty froo-froo. You can't hose out the interior, for one. Just because it's dated isn't a GOOD thing, either, if it offers zero advantage, and from what I can tell, that's the case. It's not more rugged or anything, it's just less nice.

An all waterproof interior you could hose out would be great. I agree with what you said though. No advantage at all, just dated.

I'd like to see a truck with the interior of a Subaru or Mazda in terms of fit/finish. That would be nice. Not practical, but visually appealing.
