What is considered a slow speed bearing?

That will be an NLGI #2 with no moly. NLGI #2 is for 2000 rpm or lower, probably stress the lower. Its a good middle of the road grease but nothing remarkable in the load or water washout areas.

U-joints are a completely different animal. For that you need a lube that is appropriate for micro-motion applications. There is very little churning action of the grease in u-joints, yet they generate appreciable temperatures. You actually want a light grease that can reflow under the needle bearings after it's been squeezed out by the vibration. For automotive u-joints, Kluberplex BEM 134-32 is an excellent choice.
