Like some of the others, I too don't use any extra sealants. However, I will use stuff to hold gaskets in place during installation. I guess, in some cases the holding agent could be classified as a sealant. I'll also use sealants when the factory service manual calls for them.
In general, my usual holding agent is a real thin coating of Permatex No. 2, followed a close second by black RTV silicone.
Be careful of the type of RTV silicone you use. Some will contaminate O2 sensors. Also, I was taught to keep Permatex away from auto transmission pans.
I think with any kind of sealant, less is better than more.
