Is USB 3.1 Gen 2 and/or Thunderbolt 3 going to be the predominant method to connect high speed devices to PCs.

I am not seeing many laptops with this connectivity.

Maybe it's finally time to upgrade from ESATA.

Yes - it's been the standard since mid or end of 2016. The new PC and Mac laptops are mostly coming with at least 1 USB 3.1/TB 3 port and some 2 or 4.

I just picked up the 2017 HP Spectre x360 and it's got 2 USB-C ports, one Regular USB 3.1 and one with TB.

Definitely get one with the port - it's super fast and future-proofs you for the short to near term.
