If I start a post and forget to check the "watch this thread and receive email notifications" boxes before I press REPLY, how do I go back and check them after I have pressed REPLY?

Not using mobile app, so somebody else will need to give you that.
I just click on my name in the sign on page, then click on the "number of posts", that will bring up all that you replied to. Just go down the list of topics and find the replies to add more info or see replies.
