In the late 80's I was able to get this recipe from the City Manager of Dallas Texas.

Sunday Night Fireside Soup

1 or 2 lbs smoked sausage (I use Hillshire Farms) sliced
4 cups water
2 - 15 oz. cans red kidney beans
1 - 1 lb. 13 oz. can diced tomatoes
1 yellow onion, chopped
1 or 2 bay leaves
1/2 clove garlic, minced
1 teaspoon salt
1/8 teaspoon caraway seed
1/8 teaspoon black pepper
pinch of crushed red pepper
1 cup raw potatoes, peeled and diced
1 small green pepper, seeded and chopped

In a kettle combine the first eleven ingredients and simmer for 1 hour.
Add potatoes and green pepper and simmer until potatoes are tender, 20-30 minutes. Adjust seaonings as desired and serve.

I make this twice a year for my Vet because he is so good to my dogs. I ask what he wants for a treat and he always request this.
 
Got a few soup recipes that are slowly evolving.

Last night's was.

Wonton soup

Wontons
500g turkey, pork or chicken mince.
3 tablespoons of grated turnip.
1 tablespoon of chopped water chestnut
chinese five spice
a touch of low salt soy sauce
some finely chopped wombok cabbage

knead together, and roll up in wonton wrappers.

Soup proper
1 red onion (largish), chopped.
4-5 cloves garlic pressed
1 tablespoon ginger
1 tablespoon of oil (rice bran, olive, doesn't really matter).

Saute a bit.

Add stock (2L chicken stock, 1L vegetable), and bring to boil.

Then throw in
the rest of the grated turnip
large grated carrot
grated zucchini
sliced green beans
Soy sauce
Fish sauce
Lemongrass paste
let cook for a little (maybe 20 minutes)

just under 10 minutes from serving
add heaps of shredded wombok cabbage
5 sliced spring onions (or shallots depending on where you grew up)
The wonton "dumplings"

Soups is ready when the wontons float.
 
I have a wicked chicken soup recipe... It makes a ton of it, I freeze 2/3rd's in separate zip lock freezer bags to be thawed and heated up later on, and eat the other 1/3rd over the course of a week as a supplement to other meals. It's a delicious recipe that was an internet recipe and I modified it to make it really delicious.

4x 950ml (Big Tetra Packs) Chicken Broth
6x Cups of Water
1 Package Fresh Rosemary leaves on the branch
1 Package Fresh Chives
1 Package Fresh Tarragon
4x Chicken breasts cooked then chopped up into small pieces
2x Cups of White or Brown Rice (I use Brown Basmati rice)
1x Can Peas & Carrots. (Can use frozen too)
1x Can Sliced Water Chestnuts
1x Can Sliced White Potatoes
1x Stock of Celery
1x White Onion
1x Stock of Green Onion (Spring Onion)
5x Whole Carrots sliced
1x Table Spoon Olive Oil
1x Table Spoon Salt
1x Table Spoon Minced Garlic
4x Teaspoons of Black Pepper (If you want a little kick)


Directions:

-In a very large pot pour in all the chicken broth and the cups of water and bring to a boil.

-Once at a boil add all the fresh herbs Rosemary & Tarragon. You can tie these together before putting into the pot to make for easy removal later. Let it boil in the water/broth for 5 minutes or so and then remove.

-Chop up the chives, green onion(spring onion) and white onion into as small of pieces as you can get and pour into the broth and turn down heat to mid-range. Keep covered

-Pour in very small chopped (pre-cooked) chicken breast pieces.

-Pour in Olive oil, Salt, Minced Garlic & Black pepper

-Pour in rice (uncooked) and bring to a boil again and keep covered. Wait until the rice is soft (cooked) in the broth and then add the rest of the ingredients

-Pour in Can of sliced Peas/Carrots, sliced water chestnuts, sliced white potatoes (Without the fluid)

-Cut up the whole celery stock into fine pieces and pour in

-Cut up 5 whole carrots into coin like slices

Bring this to a boil covered and keep it boiling for 20 minutes or so or until the carrots start to soften. Then reduce heat and simmer for 1 hour.

Just saw this...

My GF is from Cambodia and makes all her "real" Asian food from scratch.

Her Chicken Curry Soup is awesome - I'll try to post how she makes it!
