In the late 80's I was able to get this recipe from the City Manager of Dallas Texas.
Sunday Night Fireside Soup
1 or 2 lbs smoked sausage (I use Hillshire Farms) sliced
4 cups water
2 - 15 oz. cans red kidney beans
1 - 1 lb. 13 oz. can diced tomatoes
1 yellow onion, chopped
1 or 2 bay leaves
1/2 clove garlic, minced
1 teaspoon salt
1/8 teaspoon caraway seed
1/8 teaspoon black pepper
pinch of crushed red pepper
1 cup raw potatoes, peeled and diced
1 small green pepper, seeded and chopped
In a kettle combine the first eleven ingredients and simmer for 1 hour.
Add potatoes and green pepper and simmer until potatoes are tender, 20-30 minutes. Adjust seaonings as desired and serve.
I make this twice a year for my Vet because he is so good to my dogs. I ask what he wants for a treat and he always request this.
