Secret special steak occasionally found at Costco - prime sirloin end cap

If you ever see prime sirloin end caps at Costco, consider buying them. These steaks have the tenderness of a filet, the flavor of a ribeye.

Have only seen these steaks for sale twice at Costco. One at the Costco in Lacey, Wa, and two days ago at the Costco in El Paso, TX.

I think the keywords that must be on the label are prime, and end cap. Without those words, just a sirloin steak. These are not sirloin steaks, don't let the label fool you.

These are priced very nicely, and made the entire pack and vacuum sealed what wasnt used. That is the way to do it as Costco packs seven steaks to a pack.

Watching two of my favorite chefs while cooking these steaks last night. If you ever get a chance, watch "two greedy Italians" on YouTube. Awesome guys to watch and enjoy.

To a degree, Costco is a store you must shop. There aren't many 'surprises', but they do happen.
It figures they'd be more in the fresh end of the building.
 
I'd love to try that! Most of the steaks at my costco are choice. They look ok, but are not prime. I don't see prime at my costco.
 
A buddy of mine told me about these a few years ago. I have had them a few times now and they are pretty good.
 
It's also called Picanha and is very popular in Brazil. It's growing popular in Texas. I hope more Costco's carry it. It's very tasty from grass fed beef.

Thanks for the tip. I rarely buy or eat red meat, but a couple-three times a year I get a hankerin' for some. I'll look for these as they might be nice when I have guests. Sweetie, being from Argentina, loved her steak, and so it was a great pleasure to invite a couple of good friends and prepare a fine steak dinner once or so per year. I'm preparing the guest list and the menu as I type ...

Sorry again for the loss of Sweetie As I am sure you are fluent about, t he Argentinian's are world renowned for their mastery of the barbecuing of beef. I would love to learn their methods.

I grew up in Lacey in the 80s, graduated from Timberline. Always a trip seeing it mentioned anywhere, especially since the pop of Lacey was less than 5k ppl when I moved away :oops:

It may not be exactly the same as picanha is a very specific cut that may not correspond to typical American cuts of beef. But yeah that the general area with the fat cap. I found this photo of what picanha should look like when cut.

That's it. You grill with the fat cap on top. The meat is tender even though it's not well marbled. I overcooked a couple one time and it was still tender and delicious.

I don't think it needs to be well marbled to be tender. Filet/tenderloin is tender because it doesn't get worked and that's typically very lean unless it's something like A5 Wagyu.

I really love picanha but many Brasil type places over salt the meat.
