I have run 30% green antifreeze / 70% spring water with Purple Ice added in my Corvette track car for many years. Coolant temperature never gets over 200F on track, even on 90F days. Water has higher heat capacity and transfers heat from surfaces than ethylene glycol. Back in the first F1 turbo era, Honda ran pure water in their 1000 HP 1.5L V6, with a 50 psi radiator cap. It's all about transferring heat from the water jacket surfaces of the combustion chambers, exhaust ports, and cylinder bores.
