Question about coolant temperature gauge and issue

I noticed when i look at the digital temperature gauge this will happen about 1 or 2 times like the gauge bar will be in the middle since the car is fully warmed up but it will drop about 3 bars low and then shoot back to the middle can this be happening from the coolant temp sensor not working correctly?

I heard if the coolant temperature sensor is bad it can cause these symptoms= The driver will experience this as sluggish acceleration and having to ride the gas pedal in order to achieve what would normally be an easily attainable city driving speed.This increase in carbon monoxide could also lead to engine sputtering which will cause the vehicle to stall while idling or attempting to accelerate from the idling position.

Its kinda whats goin on with me like when im driving the car it has a hard time accelerating at times and then will just go it happens off and on when im driving the car and ive especially when im stopped and then go.I changed so many things already and no hope.

Little things like what kind of car and engine might susbtantially increase the amount of input you recieve.

The sensor for the gauge and the sensor for the computer are usually different.
You may be noticing warm up conditions, where the thermostat suddenly opens or closes. when fully warmed up, things stabilize.
