New bike tires

I currently ride an Allez sport with the OR tires installed when the bike was new. In June I'm riding my bike from San Francisco to Los Angeles (545 miles) to raise money for a non profit.

I know enough about car tires to easily pick a new set, but know NOTHING about bicycle tires! I'd like a good sturdy set that won't leave me sliding off sideways when I throw myself into a turn, and with the lowest rolling resistance possible so that I can get my miles in within a week and not drop dead.

Any suggestions? Nothing (completely) pink.

Good value tire. It's not quite as nice as the Pro2 Race, but they don't make the Pro2 Race anymore, and the Pro3 Race is too expensive.
