I’m looking for an SUV. I have some in mind, but wanted to know if I left any off the list. My needs are it has to seat 4 people comfortably, tow 5,000 pounds and have some off road abilities.
The ones I’m currently considering are Tahoe/Yukon, Grand Cherokee, Explorer and 4 Runner. I’m looking at 3-4 year old used vehicles.

Do any of those have a towing capacity more than 5,000 lbs? I don't know about you, but I wouldn't feel comfortable towing at the max capacity of a vehicle.

FWIW, my sister has been towing a boat which is right at 5k lbs when on the trailer, with a succession of 3rd and 5th gen 4Runners. All had/have a max tow rating of 5k lbs. She starts out at about 5k in elevation, and usually travels up mountain passes to higher elevation lakes. No problems with any of them over many miles.
 
With the prices of used newer vehicles, you may want to check out a new Kia Telluride which is priced in the 30's It will do everything you want.
 
I own two 4runners (2005 & 2017). I would not tow 5k lbs with either of them regularly.

I used to own a 2013 Sequoia. I towed 5k+ lbs with mine and it handled it just fine. Ours had the air suspension, so it countered any tongue weight and sag wasn't an issue. I'd definitely recommend a Sequoia over a 4Runner given the towing requirement. When looking for the Sequoia, I also considered a Land Cruiser/LX570. Went with the Sequoia due to more interior room.

Last September, I traded the Sequoia in on a new 2021 Tahoe with the 6.2. Haven't towed with it yet. A 3-4 year old Tahoe/Yukon/Suburban (presumably with the 5.3) should be able to do what you want without issue. Given your 5k towing requirement, I'd recommend picking one of the larger vehicles.

Out of those, Tahoe/Yukon. Then maybe 4 runner.
 
For some off-road situations (like on some sand beaches) you must have true 4WD, not AWD.
I’m not doing any hard core off road. I vacation in the UP and Northern Wisconsin. They have unimproved fire lanes and some boat ramps are dirt/mud. I need added traction and ground clearance.

I currently have a 17 foot boat. I’m looking to get a bigger one in the future. Most boats with trailer that I’ve looked at are about 4,000. The 5,000 is the safety cushion.I believe the vehicles I listed are 5,000 or more.
