Kauai, HI ... activity recommendations?

I have a trip planned for Kauai and wanted to see what fellow BITOGs have to recommend for activities. We won't be leaving the island unfortunately so Pearl Harbor is for a future visit. We'll be staying the the Poipu beach area and have a rental car to ourselves.

I have a snorkel tour planned and will be hitting up a hiking trail but that's about it.

Any recommended hot spots, activities, or restaurants?

Looks fun but i'd be worried about the rough ride on the Zodiac boat. Some of the photos show the boat lifting off the water a lot. Not my thing lol but I would liek to see the area. Was your ride rough?

Kauai is my favorite HI island by far! Drive the entire island and see everything you can! IMO a perfect rental for Kauai is a convertible 5.0!!!!!

On a business trip, we didn't have a lot of spare time. We rented a Jeep and drove all over the island. Wonderful. Our CEO (at the time) has a "Compound" there.

My ride was rough only when the boat stopped. It is all worth a little nausea. If you can hack it, this will be one of the best things you have ever done or will do.

Triple D had a fairly recent episode and the Hanalei Dolphin (they don't serve dolphin) is a teriyaki and sushi restaurant that is highly recommended and been around for a long time.

Visit the “Grand Canyon of the Pacific” as Mark Twain called it. It’s on the island of Kauai. The Red dirt will stain everything. Lots of free range chickens running around island. It’s more relaxed of the islands, like Maui use to be.
