...I don't have one, but I think I should. I make a tall travelmug-full of coffee using my French press, and boil the water in the microwave. It takes about 5 min, but it's hard to precisely control the water temperature (yup, I'm THAT kind of a coffee snob).

I would like an electric pot that would accelerate 32 oz of water to 210F in two minutes flat, then hold it indefinitely (well-insulated).

sure, but unless the microwave can pump out 2.2kW of RF power focused on that water it's not going to beat my kettle.

Well, apparently it's better to let the water cool from boiling for a minute before adding the tea or tea bag.

Have you ever tasted Tea that has been made from hot water that was not close to boiling?
It's actually better if it boils , then cools a little. better yet if it just begins to boil.
coffee is kind of the same, but not so critical.
When i came to North America, I quickly learned NOT to order Tea, order Coffee instead.
When I returned to the U.K. I remembered NOT to order Coffee!
 
That seems to be true for black tea according to Wiki.
For some reason on a TV program here (about tea) they recommended letting the water sit for a moment first.
