I run a farm operation in Northern IL, and find that the John Deere Universal Hyd. Tractor Fluid that we run in our loader tractor hydraulics (per recommendation) gets viscous enough in cold weather to necessitate long warmup times in order to get the loader to work to capacity, and the power steering, which shares common fluid, to turn without herculean effort. Are there fluids more suited to this application, or an additive that would effectively improve cold weather functionality?

While the Hyguard is an "approved"Jd fluid.A better base stock and add pkg will perform better in cold and heat, which you need both in this climate. Can't resist showing you this alternative.

Schaeffer's 315 is indeed an excellent UTHF fluid.
As a second choice alternative, if you have an Atwoods Farm and Ranch Store nearby try their house brand UTHF.

I use the Schaeffer's Torque fluid in my JD 970 with no problems. Its got better cold flow when compared to the Hy-gard JDM J20C fluid. I don't know if thats good enought for your location.
Have you tried John Deere Low Viscosity Hy-gard?
For the ultimate in cold weather performance you might want to go full synthetic with Amsoil THF or Chevron All-Weather THF. The last time I priced the Chevron it would set you back $16.00/gallon.
