I like the matte finish, with just the very little bit of gloss.
I use Miguiars Gold Class Interior spray, and there Gold Class Leather spray. Both products give a very rich look and a very VERY rich, expensive smell.
If you want shiny, dripping wet looks, you need to get the Meguiars NXT Generation Interior Spray (plastic, vinyl, rubber, ect.) It turns your dash board into a mirrior!!!!

I hate that 303 made my dash go from matte charcoal to glossy black. It looked like I had waxed the dash. I don't like reflections in my windshield. Getting the 303 off was a female dog.

At this point you could take a large portrait of Ricardo, cut it to size, and wallpaper your dash with it.

It may well depend on the dash's texture and porosity whether or not the 303 adds gloss or not.

My favorite is Armor All's Fierce. It is hard to come by. Only 1 store in my town has it. It is called tire foam but I use it on rubber and sometimes plastic. It does have a deep gloss to it but more importantly it just seems to clean and makes the rubber look very well conditioned and preserved.
I tried the other two (regular tire foam and the top gloss Ultimate). The fierce seems to penetrate and enrich whatever it is applied on.
Another good one is Turtle wax platinum which I don't see in stores
