So I've never really payed attention to our pots and pans until my wife picked up a set of Paderno pots and pans about a year ago. They are stainless steel with a very thick base. Before this we always had the non stick stuff and this new set is so much better.

One thing the set is missing however is a large fraying pan, say 11-12" so I would like pick up something decent. What should I look for in a good pan?

Lets say around $100 or less. (Very flexible on this if this isn't enough for something good)

Thanks in advance!

Carbon steel seems to be gaining a following. Depends on what coating, if any you're looking for.
I would look at the "Made In" brand in any case.

Unless it's crap from a dollar store you will be OK. I think we take things too seriously and pay way too much for cooking implements.

Tri-ply stainless pans can be found (ex, Cuisinart,) at that price.
Carbon steel fry pans which can be seasoned like cast iron without the weight of cast iron.

Example: https://madeincookware.com/collections/frying-pans

Cast Iron (ex, Lodge) and enameled cast iron are also out there.

Cast Iron/Stainless. Never again buying any kind of coated pan (ceramic, teflon, nano-diamond, etc.)
