Favorite BBQ sides suggestions and recipes, please

My son's getting married and I've been volunteered to cook the rehearsal dinner. I'm thinking of going with a BBQ joint menu. Í probably do BBQ pulled pork sandwiches and real lemonade and iced tea. Enough to feed about 20.

Anybody have any suggestions or links to amazing sides recipes? Thanks!
 
What does your son and his significant other want? Where will it be, at the house or somewhere else that you need to bring it to?
The rehearsal will be at the church which has a big semi industrial kitchen, so big fridges and ovens, etc.

As for what they want, I guess mainly not to have to think about it.
 
My wife (italian) started making Pernil and Arroz Con gandules for many parties. It always goes over well. I'll try to get the recipe from her.

I know she only uses Pork Shoulder Picnic and they are large like 10+ pounds. Deep slices, lots of garlic and store bought Soffrito. Marinade for like 2 days then cooks all day low.

It's good because it's fall apart tender and shreds easy. It fills an aluminum tray and people grab what they want. She keeps the pork and the rice in separate trays.

Depending season/weather/temperature she also does a nice large cucumber salad, a cucumber/tomato salad, Macaroni salad. We also get from local place that makes a ranch pasta salad that even has small ham pieces in it as well as a broccoli salad.

Other parties she does the baked ziti, eggplant parm, sausage and peppers, swedish meatballs, chicken marsala, penne alla vodka. Depends on what parties for what family gatherings
 
Grilled or fire-roasted Brussels sprouts. Parboiled before finishing them. Served with a balsamic vinegar dressing. Also dark leafy greens.

A couple as I used to host a bbq every year my favorite is a low fat Hawaiian coleslaw using greek yogurt. It cuts down the fat yet is creamy and sweet.

  • 3 cups green cabbage, finely shredded
  • Fresh pineapple ▢
    3 cups purple cabbage, finely shredded

  • 1 cup carrots, finely shredded
  • 1/2 cup fresh herbs (parsley, cilantro, dill, basil, chives, etc)
  • 3/4 cup plain nonfat Greek yogurt
  • 3 tbsp apple cider vinegar
  • 1 tbsp honey
  • 1 tsp kosher salt 1
  • tsp black pepper (adjust to taste)
  • 1/4 tsp celery seed
This makes a wonderful side or topping for pulled pork.
 
My favorite coleslaw recipe. (better yet if you shred your own cabbage and carrots)

16 OZ coleslaw mix
2 TB diced onion
1/2 cup mayo
1/2 cup sugar
2 TB rice vinegar
1/4 cup milk
