If you read the oil company sites, you will find the shelf life of engine oil varies according to the type of oil. Fully synthetic oil lasts longer than conventional oil and Mobil 1 quote 5 years in comparison to 3 for Castrol GTX. Oddly enough it does not matter if the bottle is opened, but the storage conditions do matter and keeping the oil in a cool place that does not vary much in temperature terms helps.
If you do want to use old oil always pour it into a clear glass container and check for sediment and signs of cloudiness as the additives can settle out or if the cap was not a good seal the oil may have absorbed moisture.
+2 oil definitely has a shelf life and it can be prolonged if stored properly (mine is stored in the pantry).
