DIY Screen and Recoat hardwood floors

Had our hardwood floors(Red oak) screened a nd recoated with oil based polyurethane 3 years ago.
Our small kitchen and the walkway area of our family room which adjoins it are worn.
I'm considering doing it myself using water based polyurethane this time
What I know:
1.You can't have any residue from Mop&Glow type products...not an issue.
2. You sand/screen with 150 grit screens.
3. Thoroughly vacuum all dust.
4. Apply 2-3 coats of top was water based polyurethane...I'm thinking Street Shoe gloss or similar with a microfiber roller
5. 2 hours dry time between coats and 220 grit screening between coats, vacuum, etc ..

What I don't know:
1. Can I tape a line where rooms meet that don't need the screen and recoat? IOW can I tape off and blend in the newly recoated area with areas that don't need it?
2. Can small areas be "touched up" where a tiny spot of existing polyurethane chipped or scratched off?

I've heard where some floor restoration specialists can do that and blend the poly using a butane torch. Never done that myself or seen it being done so you're on your own. Don't burn the house down .

I've not had a torch of any kind since SharkBites

I would not apply a waterborne polyurethane over a traditional oil based polyurethane no matter what the label states. I would do all the necessary cleaning and prep and apply a traditional polyurethane that is rated for use on floors. Well ventilated, proper respirator and give it plenty of cure time.
