Good evening BITOGERS. Anyone here enjoy real cracklins? I used to when in the NAVY and being close to Louisiana. I like pork rinds myself with some salsa we make ourselves. What say the faithful here?
I like the kind in the bag with the red hot powder on them but have not purchased a bag in over 20 years. I used to buy them all the time and don't know why I ever quit.
Since I was Diagnosed Diabetic, I've started using them as my Late night snack, since they have basically no carbs.
Rudolph Foods, the company that makes most of the Commercial Pork Rinds for the Continental US has a factory, and their Corporate HQ about Halfway between where I live, and my Fiancees family.
She Drives past the plant twice a day.
Through high school I worked at a family owned meat processor/butcher that took in 1/2 hogs and beef quarters from farmers and cut, packaged and quick froze it. Also rendered lard in a huge 3' diameter gas fired giant deep fryer looking kettle. Cracklins would float when the lard was fully rendered and everyone would stop by and pick out a couple. Nothing commercial had ever tasted the same, haven't bothered trying any in 40 years.
