I will be putting on the winter tires for the 2004 Impala today. Stock size is 225/60R16 with 30 PSI on the placard.

I am running 215/65R16 (for a variety of reasons, including availability, slightly lower price, compatibility with chains I had from a previous vehicle, theoretically better snow traction and having a more common size I can have a better chance of using on another vehicle if I choose to ditch the car early for some reason).

Should I use a different PSI?

Tires have min/max on them for a reason. Lower pressure for snow traction and higher pressure for lower roll resistance when it is nice out. Its your choice. The tag on the door is a OEM litigious safe starting point so the completely clueless don't hurt themselves. A TI99 scientific calculator is not needed :)
