One to two years is do-able if few short trips and a long life oil/filter combo (quality syn/hdeo). Also for cars not driven much, yet driven until engine hot each time, a year or more is also do-able.
For most situations, a year is long enough, even with long life oil and filter. Short trips and cold weather age oil faster too. And if there are any issues with the engine such as rich mixture, misfires, etc, oil can go out of grade, get contaminated, and leave engine with less protection. Plus, many people just don't bother to keep the crankcase full by adding new oil as needed. More frequent oil changes are more dummy-proof for the masses.
