Bought some yesterday at Advance Auto parts on sale, buy one get one free. I have excessive oil pressure at start up even in the summer months of 85 psi with 20W 50 synthetic blend and want to try a different oil. This motor is a high performance Pontiac 474 (1970). Is the 5W 50 a good choice, especially during the colder weather? I do like to start and drive it occasionally during the winter when the roads are clear. It says on the bottle, "formulated for classic engines" Also, will I have to readjust the valve lash as the hydraulic lifters will be filled with a much thinner oil when cold and when the valve lash was previously set?

It looks like promising stuff. I've used it, but I have a modern LS1 and autozone was a quart short on the 0w30 so I subbed a quart of 5w50 to fill it up. It should help with start up.
If you are using GTX 20w50 the viscosity at 40c is 159cSt. By comparison Edge 5w50 is 114cSt. It should help your cold starts.

Mehh, even if it shears a bit, it should stabilize as a heavy 40 pretty quickly.

Begging your pardon but valve lash on hydraulics will generally never need tweaking for the life of the engine as long as everything is good.
My car has a built in shear detector and a tune that guarantees fuel dilution. The Edge stuff will shear down over about 2k miles in mine, but it is still a fine oil for most cars and drivers as long as you're not going to a road course somewhere.
