Has anyone seen butt steak on a menu lately? I called it a poor man’s filet mignon. It was a cut of sirloin, tougher than a filet of course, very flavorful and required very little trimming. I used to see them on restaurant menus and I bought them at meat shops. Was it a Chicago thing? I ask for them and it sounds like nobody ever heard of them. It wasn’t that long ago, at least in my mind.

These come from the top portion of the sirloin (top butt) They are good for grilling or making steak bites.
 
Never heard of buttsteak. Sirloin is the last steak on the cow before you hit the rump roast - so maybe a local nick name?

Sort of like Frogmore stew (lowcountry boil). Same thing - name changed to sound more hoity toity.

I’d rather show you on my plate. I’m thinking it looked like top sirloin steak, not much fat to trim. I just picked up what the butcher called Bistro filet. He said it was sirloin. Thinking it might be like a butt steak. That’s what got me thinking about it. Butt steak at one time was very common.

Big supermarket chain sells sirloin filet wrapped in bacon. I guess I’m supposed to think I’m getting something special. It’s not filet mignon by a long shot. Actually, I prefer my bacon with eggs or lettuce and tomato. I’ll report back when I get a chance to grill. It needs to warm up a little around here.

Top Sirloin fairly lean no more than med rare or it gets to be shoe leather
