BeeLink SER5 Mini PC - Windows 11?

Bought this mini PC a few months ago from Amazon and it has been performing very well

When I check on its operating system, it comes up as Windows 11.

Yet under system restoration, it shows Windows 7

Why Windows 7 and not Windows 11?

Just a day ago I was on some site and it said my computer OS was Windows 10.

Backup and Restore (Windows 7) is an older software tool that Microsoft keeps there for backwards compatibility.

Does this Backup and Restore (Windows 7) work well on my Windows 11 computer? Can I restore to an earlier date if I am having issues? I tried the File History and I was asked to plug in an external drive. The only external drive I have is a 16 Gb USB stick. I have done Restore in Windows 7 before and it never asked for an external drive.
