You can tell the RVP by how many fumes gas gives off as you pump. More vaporous= more smelly. This should be consistent throughout the year though as gas *should* be "just vaporous enough".

For ethanol take a 100ml beaker of gas and add 5 ml of water. If it sinks to the bottom as 5 ml there's no alcohol. If it mixes with the ethanol you'll have 10ml of "stuff". Keep adding measured amounts of water until it won't take any more.
