A check of my Hyundai Santa Fe catch can

I had a can on a '13 Veloster turbo that would accumulate a lot of liquid during the winter. Less during warmer months.

Yes, will be keeping an eye on condensation over winter. This was checked before Michigan winter set in.

Does that stuff freeze? I figure gas and oil won't freeze at 32° F but if enough moisture accumulates, would it freeze? Does a car with this set up, sitting outside in below freezing temperatures every night, run that risk?

ZZman, drive the car at highway+ speeds for 30 minutes (longer if it's reeeelllly cold) to burn off the condensation in the crankcase.
