I just spoke with Yvan about the coatings used in the video you referenced, he is close with Frank (the guy who made the video). The pro only coating and Pan's coating bottles were both brand new and unopened before application. The DIY 3-year bottle was opened a some time before on another detail.
Once a bottle of coating is opened, the life span shortens dramatically. So the coating was actually coming close to its being expired and far less optimal.
Not saying that this IS the reason the DIY coating's performance was so poor, but it is a feasible possibility.
