These 3 samples were 3 separate oil changes, not 3 samples from the same oil running. So why would cutting my interval down to 5k be better solution? I’ve proven in my engine that I can do well above 5k with Valvoline Restore and Protect.

I would say maybe the hybrid battery ran maybe 500 miles if that. I covered 12,500 miles in 4 months, but also with the engine start/stop happening at the stop signs and stop lights it is said to be harsher on oil.

Why not just run Valvoline Restore and Protect 5w-30 as is? Lake Speed Jr just did a video dyno using SP rated oil on a small block Chevy. He has said SP oil is plenty fine for flat tapper.
Your engine will be fine with the 0w-20. I have put over 30k miles on my 2.5L Camry using Valvoline Restore and Protect and haven’t had any issues and all the UOA have come back fine.
