As I recall, the last non-catalyst gas engine was the Ford F-53 motorhome chassis. Into the mid-90's(!), they had 460s without catalytic converters.

Even today: I recall the Suzuki S40 still uses a carb.
 
I believe in Australia some carbureted cars were sold until 2003.
Ford South Africa used the British Essex V6 3.0L and 3.4L V6 engine in pickups with Weber 38 DGAS carburetors until April 2000.
I had a 1992 Escort Mk5 1.6 Ghia Station wagon, Carbureted and without a catalytic converter, here in Spain catalytic converters only became mandatory in 1992, and leaded gas was officially banned on 1st January 2002.
 
Not the last one, but close to it, our family had a 1989 Toyota Tercel with a carburated 1.5L with all of 76hp!

It was geared very short, so it felt quick, but revved like crazy on the highway (was also as 4-speed!)
 
Boat engines were still using some very classic carburetor designs well into this century.

For the inboards, emissions caught up to them, and they're all emission controlled with EFI, catalysts, and all.
