So my fiesta uses a white nylon one and my gen7 celica uses what seems to be aluminium with rubbery coating.

Some cars use copper etc.

Can any washer be used if its the right size or should i stick to dealer only parts?
Iv used a fiber washer on the celica before and there was a tiny weep from it.

I prefer a thick copper washer, because it can be annealed with a torch to soften it up. It can be re-used for a long time. Composites will last for a few uses, but will leak eventually. What ever you buy, buy 2.

For the Toyota, you could just order these. Maybe use twice--I bet many shops don't ever change this washer.

Never had a leak with the Toyota washers. The Toyo transmission drain uses a copper washer but isn't opened as much.

I'd be concerned with a copper washer on an aluminum sump causing galvanic corrosion. Then again, I tend to overthink things.
I like a crush washer or a fiber washer, but have no evidence one is better than another.

Then I don't get to use my favorite wrench that I enjoy using twice a year.

I have never replaced the original sump washer in the 25 cars I have owned and changed oil in. Just reused the washer every time. Never observed a leak
Local Porsche dealer wants $5 fpr one!

Well, you could find something else to use it on...
