thinking of using this as my standard grease, boat trailer bearings, prop shaft lube, general bicycle and auto grease.
It is lithium grease so it should not cause problems in general situations.
Anyone been using this? Pros and cons?

Yes, I am using it and XHP221 in my Landcruisers. It has a marine grease pedigree, so will serve you well in your boat application. Not being marketed as such, but it is an extended service life grease. XHP Special has 0.75% Moly - more than enough for automotive needs.

This is not the only grease I like, there are many excellent grease products..

Belgian Chevron which is marketed as Texaco in Europe is also an excellent grease and on various MB-Approval grease lists

I think XHP222 is a good multi-purpose grease, but on the other hand nothing special. I have used it a lot for cranes - slew bearings, wire rope sheaves, pins.
Personally I think the smell of this product is very annoying, a really strong crude-oil-like smell.
Don't pay too much if you have not bought it yet. There will most likely be several other brands that can match its performance and price.

XHP 221 is #1 grease
XHP 222 is #2 grease

22 is the code for base ISO viscosity, in this case 220

There is no preference, just the naming nomenclature confusion I use it, because it was easy for me to get. I wouldn't go out of my way to get any of those for your application.
