Those are the pitch trim wheels. On the yoke there's a switch that allows you to trim the aircrafts pitch. And what your doing when your 'trimming' the aircraft is your relieving pressure applied to the control surface. Let's say your flying straight and level at 5000 feet going around 230 knots and to keep the plane level at 5000 feet your applying back pressure on the controls to keep it level. To trim the aircraft so your not exerting pressure on the yoke so you would push the trim buttons down, or "roll" the wheels back until you don't have to keep pulling back to maintain altitude. So after you trim the aircraft it will fly itself until acted upon by an outside force like wind or a power change. As you can see in the video the autopilot adjusts trim to maintain his level flight.
