I bought some local Gouda and some absolutely stinky salty sweet local blue cheese today at the farmers market. Then I got some purple potatoes and fresh garlic at the same farmers market.....I cut the potatoes up and roasted them with Italian sausage, bacon, olive oil, some chopped garlic, red pepper flakes, a few herbs, salt and pepper at 400°F. The potatoes cooked quickly.....I took everything out of the roasting pan except the oil and mixed them in a low casserole dish with the two cheeses and some good Parmesan cheese (all three grated and mixed together). Then popped it back under the broiler for a touch of brown on top.
I thought it might be weird looking with the purple potatoes, but dang, looked and smelled like heaven. The family scarfed it down in 29 seconds....."DAD - you should cook more often". Yeah I know.
