The oil you use is far more important than the oil filter you use.

Would a more expensive filter be better?

500 miles oil change lol. Car isn't thru the break-in yet and manufacturer recommended 7500 miles or oil life
Talk about waste.

C7 and now C8 with the Z51 package require the 500 mile break in and oil change if you want to track race the vehicle and maintain the warranty. Engines are also a dry sump design.

Early C7 Z51's were track racing out the gate and blowing engines left and right. GM found and instituted the 500 mile break in and initial oil change to cut their warranty issues with the engines way down to a manageable level.

Since it was under warranty at a Chevrolet dealer they put in what the manual says to use.

He's not obnoxious, he's enthusiastic. There is a difference. He loves Corvettes and he's excited. I would be too.

The C8 owner's manual doesn't say anything about a 500 mile change like the C7 Z51s, Grand Sports, etc. I still don't think it hurts anything to change it early and who knows, maybe they'll change it like they did on the C7s. The 500 mile change in the C7s was due to some sealant used that could cause foaming of the engine oil. They might have changed sealant.

I think they must buy the cars just to get him to stop talking!
