I think I have to go with bbq pork ribs or a nice steak. (Since I am no expert on steaks I am not sure what cut of steak)

How about you?

Ribeye if I can afford it, otherwise the Costco tri-tip with the rub.
Sear it good in your cast iron skillet and put it in the oven for 10 minutes or so. Do not overcook it!

My BIL worked in a steak house for awhile. He can make a Prime Rib like no one can. He stabs garlic cloves in it.
Actually, last year we got the cheaper Costco Prime Rib with the rub and it turned out great. And I cooked it!

My all-time most memorable chunks of meat have been rib steaks from our grassfed Tamworth pigs. Sort of a hybrid between pork and beef. We served some as a prime rib roast at my parents 35th wedding anniversary and people were coming back for 3rds... We should really get some piglets again this spring.

A good chuck pot roast with gravy, mashed potatoes and lima beans. I've never been a steak person.
