Welsh Rarebit.?

No thanks I have an lactose intolerance that would make living with me terrible. My wife would suffer needlessly if I ate rarebit.
 
I've never made it, but I had it a few times at a Welsh bar I used to frequent in St. Louis. I like it a lot, accompanied with Double Dragon ale.
 
It's great...I make a variant on weekdays if I ever get them off.

Melt a little butter, make a roux, add some wholegrain mustard and a dash of Worcestershire sauce, some milk, then handfuls of tasty cheddar cheese...stir/melt until stringy, then smear over bread toasted on one side only, then grill.

Careful, it has the palate effects of fresh napalm some times.

this dish looks like a good way to burn your mouth, but also looks tasty. Bill
 
Rubbish drizzly saturday here, and local supermarket had "ancient grain" panini.

Reminded me of this thread, and rarebit for lunch it was.
