Meat up or down; what say you?
I do the 3-2-1 method. Meat up to start, wrap it and go meat down, meat up to finish it out.
I always start them flat for an hour or so then i put them in a rib rack for two more hours. Last i wrap with bbq sauce curve side down for one last hour. Best ribs ever.
I smoke 'em meat up, then finish them in a slow cooker on high full of BBQ sauce. They are so moist and so full of flavour and the meat just comes right off the bones. Soooooooo good!
