Trying to understand what these mean.

Kind of new here and I wondering what some of these terms mean. What does it mean when oil shears? What is volatility? What is flash point? Also I kind of understand viscosty, that is how thick or thin the oil is right? Feel free to add any other terms but these are all I can think of now. Many thanks!!
