Does anyone know the difference between these fluids as it relates to use in a transfer case/differential? Besides the weight, is there any real difference one would notice?

I used Valvoline 75W-90 in a GX460, no issues.

Toyota tends to use Torsen LSDs but clutch-type ones have been used in the Supra and JDM Soarer(SC300/400 here) and offered in the TRD Pro Tundra/Tacoma.

The wildcard Toyota fluid is the transfer case fluid, Transfer Oil LT, a 75W GL-4 oil. Red Line MT-LV works for that.

I just put in 3 quarts of Valvoline 75W-90 into my rear diff and it didn't explode yet.
SUPER easy with the bags on a 4Runner with the spare directly in the way. Took about 10 minutes for drain and fill. Zero mess.
I will also be putting in two quarts of that same oil into the front diff.
As @nthach says above however, I'm going to stick with the high end stuff: Ravenol 75W from Blauparts.com
There's no way that a -90 gear oil will hurt something "spec'd" for a -85 gear oil, per Toyota. It's the front number that is more important for flow; the back number offers a bit more protection the heavier it is. "5" is fine in my book as I'm out of warranty.
