An Avalon or a Maxima are drama-free options. Avalon even came as a Hybrid.

Cadillacs are quite a bargain on used market, including some of their performance offerings. But are more quirky than Japanese competition.

Infiniti is always a safe bet. M56/Q70/Q70L is calling your name with its 5.6L 420hp, gives HEMIs and Coyotes a nice run for the money.

Fixing an intermittent problem when you can't get it to act up may require throwing the parts cannon at it.

Intermittent AC could be caused by several things such as:

75% chance it's the AC clutch being bad. A bad clutch may appear as being intermittent. The clutch shoes wear down with use. Usually this only happens with vehicles with over 80,000 miles. Sometimes the clutch can be adjusted to take away the gap between the shoes and surface they go against.

A bad AC pressure switch.

A bad AC relay.

A bad dash control.
 
Lexus GS 350

Same size, perfect sized sedan. Great daily driver and highway cruiser. Snap shifts quickly and effortlessly. Engine delivers the goods when asked, with eager participation. Roll up rear window shade (great in high sun). Prioritizes AC and raises shift point when the compressor is engaged. You WILL notice mpg changes when you run the air, it cares.

Ditch the factory wheels for smaller 17” enkeis, and the turn-in and chassis dynamics improves and the ride doubles in excellence. The only drawback is this is a 21mpg city car, 26-28 on the highway. It drinks gas around town. It is a lovely vehicle.

Also, the infotainment screen is inset where it should be and doesn’t take up too much space. This is a drivers car, leave the iPad at home. I’d actually really wanted to find the 200T version, but it’s de-contented to include seat material, and loses something for me. The 350 is a gem. I’d have another.

Since we're now suggesting luxury vehicles, I'm going to add my $.02 worth. I'm a Mercedes E Class fan. A used E class will give you great around town gas milage, both with the 2.0T and 9 speed, or better yet the turbo straight 6 which came out in about 2018 I think.
Look for the luxury version if possible. The AMG du-dads don't really work for me in this kind of car, even though they are fine for what they are.
 
If you got it to 117k miles and the only issue you got was the AC, I'd pay to see how many times the depreciation savings from a German you'd have to cough in repairs if you owed one.

Sounds like Lexus is your only bet if you are looking for simple.
 
I've had my 2020 C43 for going on three years. The battery was replaced under warranty soon after I bought it but that's been it aside from scheduled services. It averages 22 mpg around town and north of 30 mpg on the road. It does have a voracious appetite for tires (due to AMG's aggressive suspension tuning) but I can live with it.
 
Have you thought about a Crown Vic? I hear they're in vogue.

Well, all good things come to an end, and as you say, hopefully it's out of your system. Just don't do what I did and get a Corolla.
New Corollas suck. Harsh ride, poor handling, fuel economy that is not what it should be. I rented a few on long trips and wished I had gotten something different. The adaptive cruise control is awful. Even Nissan got this right. Toyota is not what it used to be.

Their cruise has been bad for at least a decade; not sure on the adaptive as I've not used it much.

FE has been ok. I was doing like 36 this summer but then I started listening to audiobooks and trying to do about the limit, and that seems to be getting 38-40mpg with summer gas. Nothing to write home about.

But mine is one of the older ones, with the 1.8L not the 2.0, but still with the CVT. Not a lot of power, but plenty of road noise to make up for it.

I got a low mileage 2020 Avalon Limited a few months ago (non-hybrid). I really like the car… real wood on the dash, non-turbo V6, no CVT, no start/stop. It has a wireless cell phone charger and HUD, which even my wife’s 2023 Lexus IS350 doesnt have. On my 4:45 a.m. commute, I get 34-37 mpg. My only gripes are the amount of time it takes to do an oil change (all these underbody panels to remove) and the adaptive cruise makes it follow three football fields behind and it has twice auto-braked due to the car in the next lane over slowing down. I usually just use regular cruise control.
