Finally gave up on IC as it was way to slanted towards the IC's. Picking ingredients non Japanese chefs hadn't a clue about. Also you need constant practise to do everything in an hour which non IC chefs in a normal business wouldn't do. We liked it for a while. A HK fusion Chinese we used to frequent many moons back had scallops and asparagus in a creamy sauce in a 'birds nest' but this nest had never been near a bird. Nice though.
