Is it safe to switch from 5w30 to 10w30 and back from season to season, or is it better just to stick to one viscosity, 5w30 mostly for whole life of the car? Toronto, Canada here, it gets pretty cold sometimes. -25C sometimes. Usually stays around -10 to -20C during winter.

Thank you.

You're definitely safe, although it is preferable that you stick with the same brand. (although even that only matters if you're doing intervals higher than 3000 miles)

Flexy, if in doubt, just do a search of Patman's reported oil use history...5W30 this time, 10W30 the next, then 0W20, Schaeffers this month, Redline next, Pennzoil in his sister's car today, High Mileage in his mom's tomorrow, Castrol next summer, Mazola corn oil next year, 3-in-1 oil to lube the baby stroller wheels...all with a UOA mind you...in the interest of research!

Oh, what Patman does for the Queen!
