Subaru does not allow anything lighter than a 5W30 in their 4 cyl turbo motors, even though at 5000 rpm with a warmed up motor the oil pump relief valve gets a vigorous workout. Up until this year, they approved of viscosities up to 20W50, for severe use.
The problem is, if you're not seeing oil temp's any higher than 176F you're not getting the oil hot enough.
If your oil temp's were getting up closer to 100C the by-pass valve would of course remain closed.
Subaru doesn't recommend 20wt oil for it's turbo engines because higher oil temp's are expected. I'd look into why you're not seeing higher oils temp's. Being a part-time racer, my first instinct is to ask how much hotter the oil gets on the track, but I realize you don't race the car. Anyway that's something I'd enquire about.
